CHINESE COOKING WINE – THE LOW DOWN OF HUA DIAO JIU

I have received queries about the Chinese cooking wine which I used in my quick & simple recipes postings.

Below is the cooking wine that I usually use. If you buy it from Fairprice, you can find many similar looking bottles, I tried both the costlier ones (around $10 per bottle) and also the cheaper ones (around $3) and I find the $3 ones are also good which cater better for me as I use it for both marinates n cooking. As I use quite a bit so I find it more economical to use the cheaper ones. So far no complains, so I am sticking to it, you can also explore n try other brands out.

I like this hua diao jiu (紹興花雕酒) cooking wine because it is a bit sweet n the aroma when u pour over during cooking is really irresistible. Try it out n remember in any recipes that require wine, if you want the dish to have a strong alcohol aroma, you might want to drizzle at the end of it, or before you turn off the heat.

If not, take a little bit of time to cook & steam out any alcohol contents in the dish. Or a quicker way, tilt your pan nearer to the flame to torch the dish a little to take away the alcohol contents.
