Yes, you can really use mirin sauce and soba sauce on many dishes, it is so versatile and for just $2 a bottle, it can really goes a long way! As for green bottle, do you mean those you find in Daiso or Japanese supermarket? In Daiso, they do have the green bottle cooking wine, but it is regular cooking wine, so it is without the sweetness. When I runs out of mirin, I usually use the regualr cooking wine (sake) and add some sugar in the dish.
Some dishes call for cooking wine like some japanese pork stew, so that’s when you will need to use it, besides that I find mirin is sufficient to help me pull through most dishes as the sweetness give is a very nice fragrant. 🙂 Hope this helps 🙂
