As I have some really good chili crab pasta using Hai Chilli Crab instant mix. I thought I will give it a try and check out their range of products since it is on offer at fairprice. 🙂

This time round I went for mee Siam, as I usually go for my mee Siam fix at Qiji during weekends, I very seldom cook it.

I still remember my grandma use to cook it from scratch and the toppings are so really wonderful sambal chilli prawns which I absolutely love. And the last time I cooked was using Prima mee siam mix and it was quite ok so might as well try this out.

Ingredients : (4pax)

  • Hai mee Siam mix x 1 pack
  • Mee Hoon or rice vermicelli x 4 pax worth
  • Eggs x 2, hard boiled
  • Bean sprout x 1 pack vacuum n without sprout heads n tails
  • Chive x 3 bunches, chopped
  • Tau pok x 5 pcs, cut into small cubes  (use scissors is the quickest)
  • Tamarind or asam juice x 1 tablespoon (put in a bowl and pour some water to melt the tamarind, discard all the seeds)
  • Prawns, devein & deshell x 8 (each pax 2pcs-optional)

Directions :

  • Boil hot water in a kettle and pour the hor boiling water over the rice vermicelli and soak it for 15secs, sieve
  • Fry half pack of hai mee Siam paste with oil in a pan
  • Throw in mee Hoon and bean sprout and mix it well so that the noodles are nicely coated with the red color mee Siam paste

  • In another pot, boil 4 bowls of hot water and squeeze in the remaining mee Siam paste, put in the tamarind water
  • Dunk prawns (I also cook the prawns  shell as well & discard)
  • Dunk in tau pok for 5 secs
  • Dunk in chives for 5 secs

Tips : if u have a small sieve, wash it clean and use it to dunk into the soup with the raw ingredients, save your sanity from trying to pick all the bits n pieces)

Place some mee hoon into a plate and pour in the Mee Siam gravy over it. Put your favourite toppings and tuck in!

Okay now is the taste test, I personally find the mee Siam taste quite bland, even though I added lots of tamarind juice and lime juice. On the spot when I fry the paste it sure looks promising as it smell wonderful but taste wise… Er let’s just say I still think for instant mee Siam mix, Prima  is still better one.

But I think this paste can be good for fry dry Mee Siam, as you can still add fish sauce to perk up the taste. Sometimes if the sauce you got doesn’t taste as good, don’t discard it 🙂  just try to reinvent something different, that way you won’t even waste anything 😉
