I hae long wanted to try out my Happycall pan for desserts besides pancakes, and with a box of Betty Crocker which I bought during Robinson expo sale, it will be a great time to try out this Happycall cake recipes. 🙂
Besides that I also got a handmixer from Daiso, yup, you hear me right, $2 for a hand mixer? cool isn’t it? and it became my son’s new found tool 😀
The Betty Crocker Super Moist cake mix that i got is as what it says super moist, I tried once before and it is not very dense because it has pudding mix in it. So I am also a little apprehensive if the cake can turn out too moist and might crack while cooking.
As for this Daiso hand mixer, it comes with various cool sunshine colors like pink, green, blue and yellow, all you need is pop in couple of batteries and is all ready for its action. 🙂
It is small enough for your kids to hold and it is also not chunky so it is pretty safe. Not the strongest mix you can get but can do the job, and give me a peace of mind when my son use it. Need just couple of batteries. 🙂
Ingredients you will need to make this cake with your little one 🙂
- Betty Crocker x 1/2 box (you can keep the other half for another occasion :))
- Water x 3/4 cup
- Eggs x 2
- Walnuts x 3 tablespoon
- Marshmallow x 2 tablespoon
- Oil x 4 tablespoon
Directions :
- Smashed the walnuts into small pieces (trust me your kids will love this, haha..)
- Marshmallow is optional, I got some Muji lemon jelly marshmallow, so I also added some in it (okay this is more like my son persuading me to do, but I don’t see any harm to add in marshmallow as long as it is fun and edible)
- Mixed all ingredients (except marshmallow & walnuts) together (dry first, follow by liquid)
- Mix it using the handmixer until no more powder in it.
- Mix in the marshmallow & walnuts and stir it a couple of times
- Pour it over into the happycall pan
- Under low fire, close it and cook it for 10 mins, and flip your pan. ** things to take note, as you are usinng fire to cook this cake, I recommend you to shift the pan every couple of mins like to every corner, so that the middle section will not get burnt.
- I used 20 mins to cook this
You can see the bottom middle section still have a little burnt, but it is only the surface, you can scrap it out, but I ate it as it is a little crispy, kind of nice hahaa…
Honestly, this cake is more like Huat Kueh, which is steamed cake rather than chocolate cake, haha… partly because I am using a super moist cake mix and also ultimately it is still cooked by happycall which involve a little on the steaming process.
I served it with some fruits and also mangosteen sherbet, and it became a dressed up dessert instantly 🙂
My mum like it a lot as she finds it taste like huat kueh and is very soft and moist, but to my husband who is a die hard brownie fan, he finds it a little strange, as for my boy, he just happy to try on anything with chocolate in it. 🙂
Try pairing it up with some good vanilla ice cream. 🙂
I also for experiment sake, tried to cook some patches for longer period, but it is still super moist, so I think the moisture is more from the pudding mix in it too. 🙂
But you know what? this cake taste great when it is cold! I tried this morning after packing up in the fridge, and when I tried one piece this morning and another one reheat in the oven, the cold one triumph! It taste like some kueh haha.. but with a very nice texture and it taste like a cold pudding too. 🙂

Yes, the hand mixer although is quite petite, it still works pretty well, of course for adults the larger tools will be better, but as I use it with my son, it fits perfectly for his palm size. As long as the chocolate chips are not the huge chunky ones, it will be fine. 🙂
