I have left over glutinous rice from the Dragon Boat Festival , and has been wanting to clear all these away. As I walked by the supermarket vegetables section, I came across this Bo Bo Cha Cha yam / tapioca / sweet potato instant pack and got a light bulb moment to make something colorful with these ingredients. ๐
My initial plan was to make a Colorful Vegetarian Recipe using HappyCall Pan but as I wanted to clear some chinese sausages as well, I decided to make an “Almost” Vegetarian dishes. ๐ But feel free to stick to vegetarian too.
Ingredients :
- Glutinous riceย x 1 cup
- Bamboo leaves from Dragon Boat Festival Rice dumplings, you can skip this or use banana leaves too
- Chinese sausage x 1/2, sliced finely
- Edamame x 3
- Red Beans x 1 tablespoon
- Yam / Tapico / Sweet Potato x 3 tablespoon (balance we used it to cook Bo Bo Cha Cha haha…)
- Korean Chestnut x 1 pack
- Salt x 1 teaspoon
- Japanese cooking wine x 1 tablespoon
I have not soaked the glutinous rice over night, but did use some warm water to soak it an hour before cooking, works just the same. ๐
As for the red beans, you might also want to pre soak it before cooking, over night is optimal, but if using warm water, 1 to 2 hours before will be just fine.
This recipe is sooo simple, you will have to see it to believe. Basically just mix and let HappyCall do the cooking. ๐
I am a big fan of these Korean chestnut, this is so called the best I have tried, all my friends whom I have recommended them to try it out said the same thing too! ๐ Cost $1.90 per pack.
And this is the Top Gourmet Bo Bo Cha Cha kit that I mentioned, for a few dollars, this helped you to wash, diced and pack up, I have no complains at all. ๐
Now back to the cooking directions.
- Place the bamboo leaves on the Happcall pan,
- Mix all the ingredients together and place it onto the bamboo leaves
- Pour 2 bowls of water, make sure the rice is slighly submerged in the water.
- Place the remaining bamboo leaves over it and close the pan, turn the heat to low fire and cook it for 25 – 30 mins.
You can smell this subtle sweetness of the vegetables, and I didn’t add any soya sauce or dark sauce because I want to eat the natural flavour of the vegetables instead.
Using just Happycall pan and you can cook this up in half hour, this is really a fuss free recipe. Try out with normal rice if you are not keen in glutinous rice too. And try not to quicken the process and use high fire, as this might cause the rice to be to mushy or under cook.
For a change, try something with natural flavour, and feel all energize again with these delicious & nutritious meal. ๐
