QUICK AND EASY JAPANESE MIXED RICE RECIPE – NUTRITIOUS TASTY ONE POT WONDER

Sometimes over the weekend, you can either cook up a storm or you can be just so tired that you just want to cook up something simple and quick and a plus if it is nutritious too. 🙂

And here I have a recipe for you which is great when you are busy on busy weekday evenings or may be just chill on weekends, with very little monitoring. 🙂

Quick & Simple Japanese Mixed Rice Recipe

So with so little things to prepare for this scrumptious one pot wonder, you  can definitely spend less time on the slaving in the kitchen and more time with your family 🙂

Feel free to tweak your ingredients as usual :0 (this can feed 4 pax)

  • Japanese rice (optional) as I like the chewiness x 2 cups
  • Mushroom x 1/2 pack
  • Spring onions x 1 stalk
  • Carrots x 1/4, sliced
  • Fried bean curd or tau pok x 3 pcs
  • Dried kelp x 1 teaspoon
  • Soba sauce (from Daiso) x 3 tablespoon
  • Mirin (from Daiso) x 1 tablespoon
  • Pork (chicken thigh or cha Siew or shabu shabu beef) x handful & diced.

You can always increase the quantity of it if you want it to be more meaty, but I find mushroom also gives it bite so I didn’t put a lot of meat in there. 🙂

There is really no specific amount of ingredients in it, any one ingredient can be added more if it is your favourite. 🙂

Directions :

1) In the rice cooker pot, pour water till the 2 cups measurement, pour it out into another pot and boil (this will indicate how much water you will need to cook the ingredients) if 3 cups rice, then measure till 3 cups

2) Wash Japanese rice until water runs clear, if you want to know how to cook Japanese rice, you can find it here

3) When the water boils, boil all ingredients except carrots, you can add more soba sauce if you want it to be more savory, and  if you do not have mirin then just add 1 teaspoon of sugar and a pinch of salt, once the broth bubbles, turn it off and let it cool down.

4) Once it is cool or even warm is ok too, pour it back into the Japanese rice in the rice cooker and place the carrots on top of the rice, turn the rice cooker on and let it cook as per normal

The reason why I cool the liquid down is because if you pour in while hot, the rice cooker will heat up too soon and the rice might be left undercooked or worse mushy so it is better not to pour boiling liquid into the rice. 🙂

5) Once it is done, sprinkle some chopped spring onions or seaweed before serve. Pair it with miso soup or pickles and you have a wonderful healthy meal for the family, no sweat and so little washing too! 😉

For kids, I recommend you to use chicken thigh meat instead of pork as it is more tender. 🙂

You can also use this rice to make Japanese rice ball too, for picnic or just bring along too work 🙂

Just use a cling wrap, and scoop some of these rice into it, very simple and colorful. 🙂
