I got this huge mango and has been itching to cook up something with a summer feel to it, at first I want to make a mango salad, but then I didn’t feel like salad greens, and my mum has been talking about sushi lately so I thought why not do up a summer roll? 🙂
Aim was easy, to make something refreshing and colorful, a balane of savory and sweetness.
So there you go, simple ingredients :
- Mango x 1/2
- Cucumber x 1, slice finely
- Steaky Bacon x 2 pcs
- Eggs x 2, beaten and add a little cream or milk or japanese sweet cooking wine, about 1 tablespoon will do
As you can see, slicing it up is fairly simple, just slice them up to bite size.
As for the bacon, just fried it under low fire until it gets all crispy and the oil will come out. Just leave it on paper towel to soak up any excess oil and it will be good to go. 🙂
For cucumbers, the easiest way to slice it thinly, is to slice diagonally, and then place it like below, and begin to chop it across, this way you will get really thin crunchy slices.
I use my happy call pan to cook up the omelette skin. It is the best pan to get the job done, because it is wide and in rectangle shape, just what I need. 🙂
Under low fire, just pour a thin layer of beaten eggs, and then flip over when it is done.
Now after everything has been done, all you need to do is to place all the toppings onto the omelette skin and roll it up.
I like how the sweetness of the mango compliment the crispy bacon, and of course the finely sliced cucumber added even more refreshing crunch.
You can always add some mayo in it too, but I personally like it plain because you can taste the mango really well.
This is good when you don’t feel like any carbo and want something refreshing and light. 🙂 Try using tin can mandarins if you can’t find mango, or swap cucumber slices with apple slices too. 🙂 Colorful yet healthy
