My husband loves Japanese curry rice, and although he doesn’t like fusion food, he somehow likes this fusion Japanese curry rice which I make.
Why I called it fusion? it is because instead of using potatoes, I used sweet potatoes instead so there is this nice hint of sweetness in the curry.
My family prefer the spicy ones so we still stick to the hot flavour of Golden Curry and do not mix our curry mixture. However I do increase the aroma by adding in coffee powder (not 3 in 1) and also jam to give it a little fruity or sweetness to balance out the spiciness.
Look how gorgeous these Vietnamese sweet potatoes is!? I just can’t leave the supermarket without it. 🙂
Standard Japanese Curry ingredients : (serve 4 pax)
- Carrots x 2
- Onions x 1
- Sweet Potatoes (usual is potatoes) x 2
- Garlic x 2 cloves, crushed
- Pork / Beef / Chicken x 2 packs
- Golden Curry half pack
There is one good thing about Japanese products, is that they design their products to make it very convenient to our daily busy lives.
Just like this, this large box come in 2 separate packs, so you only finished one pack and can keep the other one for another occasion. 🙂
Basically what you need to do is to chop up all the ingredients.
Directions :
- Boil a pot of hot water in a kettle
- Brown onions in a pot under medium heat (preferably non stick as the gravy can become quite sticky)
- Sauteed pork / beef / chicken cubes with garlic
- Pour in all the vegetables and pour in hot water, with 2 cubes of curry in it, let it boil
- Once boiled, scoop out the impurities and boil further for 5 minutes, scoop in one teaspoon of coffee powder & 1 teaspoon of jam
- Once it starts to thickens, put in couple more cubes to let it further thickens. Pour for around 20mins under low fire.
Serve it with hot steam rice, and some japanese pink pickles. I personally like the curry overnight, as I find the flavour taste even more aromatic.
My family also cooked spaghetti with it too, just pour it over like pasta sauce. Quite unconventional, but that’s the thing about recipe, ideas is endless and there is no right or wrong. 🙂
