After my dining experience at Robert Timms, I have decided to try my hands on paper bag recipes.
Paper bag recipes originated from France and it used practically no oil just fresh ingredients and steam the food in the oven with well.. It’s own juices so the food will comes out succulent and juicy, not counting how healthy it is too. 🙂
You can of course use aluminum foil but it is not good to use with acidic food and also your food can end up with a little metallic taste, so do stick with baking paper if possible 🙂
And the best ingredient that can use this recipes is something that can be cooked easily which are fish, chicken and vegetables.
So this time round, I have prepared Citrus Snapper and Thai style basil chicken.
For Thai style chicken I used the Thai heritage spicy basil garlic sauce as a marinade, you do see I have posted quite a few recipes using this. The reason is that I want to show you how versatile marinades and sauces can be so you do not necessary have to keep the bottle untouched after just one cooking.
Ingredients needed for the Thai style chicken
- Baking paper x 1/2 A4 size
- Chicken fillet x 5pcs
- Cherry tomatoes x 5
- Zucchini x 8 slices
- Yellow capsicum x 1/4
- Thai heritage spicy basil sauce x 4 teaspoon
- Japanese cooking wine x 1 teaspoon
- Salt & pepper
Feel free to swap the sauce to some spices like oregano or thyme, I could not get it at fairprice so I used this sauce instead.
Directions
1) Slice chicken in cubes and vegetables in slices
2) Place zucchini, the chicken and follow by the remaining vegetables onto the baking paper, add Japanese cooking wine, salt pepper.
3) You can choose to mix the sauce with the chicken or spread it on top of the ingredients.
4) Wrap the paper bag up at both ends to seal it up or  and fasten it using a stapler, as long as it is sealed tightly
5) Preheat oven to 200 degrees and then pop the bag in for 30 mins, serve piping hot and tuck in! 🙂
This recipes is very healthy as it does not use any oil, I love the broth which is fully infused with chicken and vegetables essence. But my favourite part is still the zucchini as it has absorbed the broth so well, it tantalize my tastebud everytime I bite into these yummy veges.
It is so piping hot, my camera got all fogged up too. haha.. 🙂
You can go all creative with this dish, play around with the ingredients and cook up things like mushroom and chicken etc. and if you do not mind the calories, then add just a small slice of butter once you open the paper bag, you will wonder why you have yet to try this simple recipe out. 🙂

The Chicken fillet texture is really melt in my mouth kind of tender because it literally cooked in its own broth under slow cook, so the meat turn out really tender and is great for young children (minus the spicy basil flavour :)). For kids you also try just some teriyaki sauce or miso as well. Another good try is to go Greek or Italian, so mix around ingredients and spices and cook up a storm with our local products 😀
