Do you like Western soup? I love pumpkin soup, its the earthy sweetness that I love about them and the color of bright orange always lift my up my mood. 🙂
I like to make pumpkin soup with a mix of potato or carrot, and this is a recipe that is so easy to make that you don’t even need a blender for it. This recipe actual cooking time on the stove probably takes less than 10 mins, and all I need is your rice cooker, and a pot. 🙂
Ingredients you will need to make 2 large servings :
- Pumpkin x half
- Potato x 2, peeled
- Cooking cream x 1 tablespoon (left over cream, you can always whipped up a cream pasta :))
- Stock cubes x 1 (you can use either vegetables or chicken stock, for this I used vegetable cube)
First off you will need to cut up all the vegetabes, for potatoes, you can peel it before hand, but pumpkin you can leave it as it is. Let it steam in a rice cooker for a good 15 mins and you will be greeted with some sweet aroma of freshly steamed vegetables.
By the way, you can opt to not use the vegetable cube, but as I find that it is usually without MSG now, so I will still use it in instances like this. If you want to, you can also cook up onions, garlic, celery and carrot and bring it to a boil to make broth, but as I am only making this soup for 2 people, I think the vegetable cubes work just fine. 🙂
- Scrap out the pumpkin flesh using a spoon and mix it with the potato.
- Fry some bacon bits if you want to add some color and omph to the soup
- You can drizzle some of the bacon oil (just a little) to add a little smoky taste too, and fry the mashed & steamed vegetables in it, give it a good stir for 30 secs, and pour in 3 small rice bowls of water.
- Bring it to a boil, and if you have the potato masher, you can always use it to mash up all the bits and pieces
- Once it is boiled, you can turn down the heat to low fire and drizzle a little of the cooking cream, and let it cook about 30 secs.
I like to add some bacon bits and spring onions, not only does your dish color will pop, it also give it a very good bite, pair it with garlic bread and this is a meal on its own. 🙂
You can also opt this recipe for potato soup, carrot soup, butternut, for califlower or brocoli, I still think best to use blender as you do not want small bits to be stuck between your teeth, hee hee…
