QUICK & SIMPLE RECIPES – JAPANESE POTATO SALAD

Hi there,

Do you love to order Japanese potato salad at Japanese restaurant or finding it hard to replicate the taste when you make it at home? I have this quick & simple recipes just for you.

I usually make this when I cook fried pork chop or western food, or  just a snack on it’s own. This goes well as a side dish as well and I guaranteed it is so simple, all you need is a big bowl, a pot, and a fork, no hard labor on the washing too! ^^

First off, what you need for ingredients will be :

  • Potato x 3 (I recommend russet potato for it’s velvety texture)
  • Carrot x 1
  • Cucumber x 1
  • Corn kernels x 1/2 cup
  • Green pea x 1/4 cup
  • (you can substitute the carrot, corn kernels, green pea n use frozen mixed veges if you want to save time)
  • Japanese or Korean mayo
  • Salt n pepper X 1/2 teaspoon
  • Lemon juice X 1 tablespoon

Directions (the easiest version by using frozen mixed vegetables):

  1. Place potatoes into a pot of hot boiling water.
  • (Tips #1: Add a pinch of salt into boiling water, this will bring up the temperature of the water & quicken the boiling process)
  • (Tips #2: Place the frozen veges in a metal sieve and place inside the pot together with the potatoes, & boil together, this way, you do not need to boil the vegetables separately, and save gas & time)

      2.    After potatoes are cooked, soaked them in cold tap water

  • (Tips : Lightly slice around the potato before soaking in cold water, the potato skin will come off in secs!)

       3.    Mashed the potato in a big bowl, squeeze in Japanese / Korean mayo (amount depends on your
               preference, basically the more you put in, the creamier the potato salad will be), thereafter,
               salt & pepper to taste, squeeze in some lemon juice, followed by sliced cucumber &
               mixed vegetables.

       4.    Mix all the ingredients & there you are, fuss free Japanese potato salad at your finger
               tips, great to make this as party food, you can also keep this for up to 2 days in the fridge,
               the great thing about this recipe is that, you can even cook for 1 person portion, just use 1
               potato and 1/4 cup of mixed vegetables.

You can serve it warm but I prefer to cool it down in the fridge and make it a cold salad. Either way, it will make a delightful meal.
