QUICK & SIMPLE RECIPES – VIETNAMESE FRESH SPRING ROLL

Hi there,

I make quite a lot of salad at home and the Vietnamese Fresh Spring Roll is one of my favourite when I want something light and  especially when I cook up Vietnamese beef noodles, to pair with them. Not only Quick & Simple recipes but also very delicious & healthy.

I have tried a few brands of Vietnam spring roll skin, but either they are very tough or they tear really easily when I wrap them around, I got this brand from Sheng Siong supermarket when I was looking for some mala steamboat  soup base. So thought will try it out, & to my delight this brand is really good!

Ingredients you will need :

  • Carrot x 1 (sliced finely)
  • Cucumber x 1 (sliced finely)
  • Bean sprout x 1/2 packet (around $0.30 when you choose from the supermarket)
  • USA lettuce X 1/4 (sliced finely)
  • Roast Chicken x 1/2 (I usually get this from supermarket, hassle free)
  • * Mushroom (optional, I tried it the last time with butter and soya sauce & it gives a very savory taste to the spring roll)

Directions :

1.    Dipped the spring roll skin into water lightly, as it will turn soft quickly
(Tips : Use a plate and fill with water to have the spring roll dip in it, rather than a bowl, you can also use a pastry brush to brush water over it)

Process 1

2.    Place some carrot/cucumber slices/bean sprout/ lettuce with some roast chicken at the center of the spring roll skin and wrap around it.

Process 2

Cut the spring roll in half or serve it as it is with some salad dressing. This goes realllly well with Japanese sesame dressing!

This is also a great dish to go with deep fried food. You can also replace roasted chicken with ham or crispy bacon, or some finely sliced egg omelete, any ingredients can be used, very versatile indeed.
