Hi there,
I was testing out some Reunion Dishes at home in anticipating for coming Chinese New Year. While I was at Carrefour over the weekends, there were already lots of frozen seafood on sale, and I spotted these really juicy looking scallops from the promotion corner.
So I have decided to cook up 2 dishes using scallop, both Chinese & Japanese style.
For Chinese I have cooked up a scallop with broccoli sauteed and for Japanese, I have prepared a miso butter scallop which goes very well with rice dishes.
For Miso Butter Scallops, you will need following ingredients :
- Frozen scallops x 1 pack
- Japanese sweet cooking wine mirin x 1 table spoon
- Miso x 1 – 2 spoon depending on your likings. (white miso or red miso can be used too)
- Butter x 1/2 cm slice
Directions :
1) Heat oil + butter under low heat on a non stick frying pan
(Tips : Pour oil first on the pan and then place the butter inside the oil will avoid butter burning in the pan)
2) Sauteed scallop on both sides (each side about 1 min)
3) Spread some miso paste and slowly melt the miso and fried until slightly fragrant
4) Pour in japanese cooking wine mirin into the pan
5) Tuck in!
Actually there is also an even quicker way, what you need to do is to microwave the butter + miso + cooking wine in a bowl until all sauces are mixed well together.
Then sauteed the scallops and pour the sauce into the pan, Viola, easy huh?
You can also place some cheese on the scallop and baked it for a further 1 min until the cheese become slightly burnt and crispy, goes very well with rice or bread. 🙂

As for ingredients on Scallop with Broccoli, you will require :
- Broccoli x 1
- Frozen scallops x 1 pack
- Carrots x 1
- Scallop 1 pack
- Fish sauce x 1 table spoon
- Chinese cooking wine x 1 table spoon
- Crushed garlic x 3 cloves (optional, but I think it adds a lot of flavours to it, and compliments very well)
* This dish can feed 3 pax
I find pouring in some cooking wine in this dish does makes a difference, so although you don’t see the picture of the wine, please remember to pour in some before you turn off the heat 🙂
1) Boil a pot of salted water (about 1 teaspoon of salt in it, as this will keep the vegetables vibrant green after cooking)
Also pour in a little oil into the water. (1 teaspoon)
2) Cut up all the broccoli and carrots, boiled for 1 min and sieve out, immediately transfer to cold water to cool down the cooking process.
You can go all fancy on the carrots if it is for Reunion Dinner, looks count too, right? 🙂
3) Heat some oil in the pan and sauteed the scallops
4) Sauteed about 1 min each side
5) Pour in the vegetables and sauteed for 10 secs, then drizzle in the fish sauce and cooking wine.
6) Tuck in! 🙂
This dish is both colorful and also tasty, I am sure it will be a hit during the Reunion Dinner, anyway, it is so easy to cook too, definitely lessen the work load during the Reunion Dinner preparation.
Happy Cooking!
