QUICK & SIMPLE THAI STYLE PRAWN TOAST RECIPE – SAWADEEKA

Hi there

I am obessed with the prawn toast from Thai Express, and will always order it if I go to there. So far I have not tried out making it myself, and I have always wanted to try it out ever since I read from a kids recipe book about prawn toast. 🙂

Prawn toast is a very quick and simple recipe, you can use just pure prawn as the main ingredients or you can also mix it some minced pork or chicken to give it more bite. 🙂

This time round, I wanted to try on my $10 dicer from OG, to see if I can diced everything up beautifully using this.

I got this dicer last year and it has been a great kitchen tool to me every since, when I need to make Alio Olio pasta, which requires lots of chopped garlic, this works like magic, only take me a min or less just by twisting the blades to do the work.

So back to the Quick & Simple Prawn Toast Recipe, the ingredients that I used this time round including :

  • Prawns – 10 pcs, devein and deshell
  • Minced Pork – 2 tablespoon
  • Garlic – 3 cloves,
  • Ginger – diced finely
  • Lemon grass, chopped finely
  • Corriander – a handful
  • Egg – 1
  • Corn starch – 1 tablespoon
  • Sesame oil, salt & pepper (optional)
  • Baguette or white bread

Directions is fairly simple basically just

  1. Blend all garlic / ginger / coriander together and place in a separate bowl
  2. Blend the prawns and mix in 1. with mince pork
  3. Add 1 egg, salt / pepper / sesame oil & corn flour & mix well
  4. Spread on to the sliced baguette, sprinkle some sesame seeds and fry prawn paste face down

I find blending the prawn in the dicer is quite hard, as the prawn can get stuck onto the blades, so I would say keep the dicer for the blending of garlic and other vegetables instead, something that does not cling easily to the blades.

I tried both deep fried and pan fried to just see how both will taste like. I personally preferred the pan fried one although the color does not turn out as vibrant as the deep fried ones.

Below is the deep fried ones with sesame seed, and you can see the bread are fried till golden brown.

Whereas the pan fried ones, the bread is not as golden, and the prawn paste color is a little dim. But I find this less greasy and taste really well with Thai sweet chilli sauce. I served it with some fresh corriander and a squeeze of some citrusy lemon, the rest of the family members enjoyed it.

Besides this, I served dinner with Thai style minced pork with rice. I tweaked the recipe a little, as instead of using Thai basil, I used laksa leaves. Should have used curry leaves instead, but I got the wrong packet in the supermarket……

Nevertheless the laksa gave it quite a unique fragrant, and with fish sauce as the main marinade, this goes well with rice. So just a little home made Thai Express moment at my home. 🙂
