SALMON FISH HEAD MISO STEW WITH HAPPYCALL PAN – FULL OF COLLAGEN GOODNESS

I was at Nex the other day when I pass by the Shokutsu 10, where they have this counters selling both sushi sashimi and also some fish heads & fish bones, which is just perfect for stew.

And what’s more, it only cost $4.50 for a pack of fresh salmon fish heads, fully cleaned and ready to be cooked into some stew which is full of collagen goodness. 🙂

I am also going to try out using Happycall pan to cook up this stew, kind of like a test actually. 🙂

This recipe is perfect to use Happycall pan, since you can fry the fish head in the happycall pan without oil spilling out, and also it is so easy to clean up too.

 

Miso Salmon Fish Head Stew with Happycall pan

Ingredients needed :

  • Salmon fish head (choose one with “bright eyes” which is the first sign that it is still fresh)
  • Enoki Mushroom x 1 pack
  • Spring onions or leeks x 2 stalks
  • Tofu x half box
  • Carrots or radish x 1 small
  • Miso x 2 tablespoon
  • Mirin x 1 tablespoon
  • Garlic x 2 cloves
  • Ginger x 2 slices

Directions :

  1. Wash and clean the fish head, drizzle a little oil (1 teaspoon) and place the fish head in the pan and close it
  2. Flip the pan to the other side after 3 mins under low fire, use a paper towel to soak up all excess oil from the pan.
  3. Place garlic clove and ginger slices in it, pour hot water in it
  4. Squeeze in miso paste and pour in mirin, carrots and close the pan and let it cook for 1 min
  5. Put in enoki mushroom, tofu and let it simmer for a further 5 mins. Remember cook all under low fire.
  6. Serve immediately while hot.

You can also add in kim chi to make it a spicy stew too. 🙂 other soup base can be soya sauce base, soya bean milk base, dashi base. As for the fish, you can choose salmon fillet or white fish, or even a seafood stew, but take note that if you choose to cook seafood stew, it is better not to do any frying of shelled fish or crabs with the shell on it as it might scratch the happycall pan. 🙂

And you can also pair the ingredients with some ponzu which is citrus soya sauce too.
