As I still have the remaining pesto from pesto spaghetti and the beer can chicken left in my fridge, I decided to cook up something that can help me clear off these remainingΒ  sauces.

And as it is the weekend, I wanted to make something easy to munch on and not heavy and even better if my son can also eat it too, so I can hit two birds with one stone πŸ™‚

And so my quest for clearing up the sauces brought me to some home made burgers πŸ™‚

I decided to make two flavors. One is Thai style pork burger with spicy Thai basil and garlic serve with sweet peaches. The other flavor will be pesto chicken burger with roasted red pepper πŸ™‚

Thai Basil Pork Burger & Pesto Chicken Burger

I used happy call pan as it can quickly steam and grill the patties at the same time. Feel free to use any pan to cook this.

Ingredients for Spicy Thai Basil Pork Burger :

  • Minced pork x 200g pack
  • Tofu x 1/2 box (the other half will be kept for the next burger flavor)
  • Egg x 1
  • Spicy Thai basil and garlic sauce x 1 tablespoon
  • Minced Lemon grass x 1 tablespoon
  • Spring onions x 2 stalks(optional), chopped
  • Kai lan or green vegetables x 1 stalk, chopped finely
  • Salt n pepper x a pinch
  • Corn flour or plain flour x 1 tablespoon

Directions

  1. Mix all wet and dry ingredients in a bowl and let it marinate for 5 mins.
  2. Form patties just right before you cook
  3. Turn on small fire, pour a few drips of oil,Β  place patties on the happy call pan, close the lid, let it cook for 5 mins.
  4. Open the lid and flip the patties, then turn to medium heat and let the liquid vaporize and grill till brown and no liquid oozes out when you press it.

I pair this patties with tin can peaches, as I feel the sweetness of the peaches will compliment the spiciness and sharpness of the Thai basil.

I also saw some clearance offer of whole meal pita bread so I decided to use this as the burger bun.

Ingredients for Pesto Chicken Burger with Roasted Pepper

  • Minced chicken x 200g pack
  • Tofu x 1/2 box (balance from above)
  • Egg x 1
  • Mark and Spencer x 2 tablespoon
  • Walnuts x 8 pcs, chopped (optional)
  • Red pepper x 1
  • Salt n pepper x 1 pinch
  • Corn flour or plain flour x 1 tablespoon

Cooking method exactly the same as above

Directions

How to roast capsicum or pepper at home

As to roasted red pepper, you do not need to grill it in the oven. My favourite way of cooking it is to roast it on the open flame with your stove, the sweetness of the red pepper will caramelized and you can definitely taste the sweetness of the red pepper. Use a metal thong

  1. Clean and cut, deseed the red pepper
  2. Roast it on the open flame till the skin is blackened
  3. When the red pepper start to soften, place it on a paper towel and cover it with another piece of paper towel for 5 mins while it is hot
  4. After 5 mins, you can peel off the red pepper skin easily and you will left with this red pepper with very sweet aroma that is so mouth watering πŸ™‚

Place all the patties on the toasted pita bread and pair with roasted pepper or peach slices. Serve it with some potato or corn chips or a potato or side salad πŸ™‚

In case you wonder why not put bread rather than tofu into the patties is because the parties will turn out more succulent and also not as meaty which is so much lighter on the palate.

I like the Thai Heritage brand of minced lemon grass too, you know how somestimes you get the fresh ones but it is sometimes very difficult toΒ release the flavour out, you can bruise it to release the flavour but this may leave lots of fibers from the lemon grass as well, so this bottle is just what I need – fuss free for the weekend. πŸ™‚

I serve some for my son and pair it with Korean rice cake with tomato sauce. These patties is always kids favourite πŸ™‚

    1. Hi Wendy
      I got the frozen korean rice cake packet from Shine Korean supermarket, (they also sell it in Fairprice as well :)).
      First you boil it in hot boiling water (about 2 mins), once it is al dente, which is slight tender in the inside, sieve it out and let it run under tap water to wash out the starch residue.
      Then fry in a pan with very little oil (or no oil but immediately add in the sauce), you can add ketchup (which is kids favourite), or use tin can tomato paste or pasta sauce, I also like to put in a little brown sugar to bring the taste out if I use pasta sauce too.
      My son loves it a lot because to him, it is slightly chewy and full of tomato flavour. For me, i think it is a good alternative, as rice can get boring for kids, these rice cakes are just as good and very affordable too. πŸ™‚
      You can store it in the fridge and take out as and when you need some, or you can also cook up some for the family, recipe is here. πŸ™‚
      p.s. if you serve to kids, remember to cut into small bite size and always supervise too, I am quite cautious as I do afraid kids might choke on it if it is too chunky. πŸ™‚
