Do you like potato salad? I love salad and potato salad is one of my favourite because it is so easy to make, ingredients is so\u00a0affordable and taste great with dressing like mayo. \ud83d\ude42<\/p>\n

<\/a><\/p>\n

I have made \ufeffJapanese Potato Salad<\/a> in the past and I like to make it when my family decide to cook up some fried food like deep fried pork chop Tonkatsu.<\/p>\n

<\/a><\/p>\n

Over the weekend, While grocery shopping at Carrefour, I was checking out their range of in house mayo brands available.<\/p>\n

<\/p>\n

I have always wanted to try their mustard mayo but because it only comes in large bottles, I ended up not buying it.<\/p>\n

But this time round I finally see they have smaller bottles available too so it will be a great time to make some potato salad.<\/p>\n

<\/a><\/p>\n

There are various ways of making potato salads and it is such a versatile dish, add in more vegetables or fruits to give it a more summer salad feel. Or you can also add in bacon to add more bite to it.<\/p>\n

<\/a><\/p>\n

Usually I make Japanese potato salad, or pour in salad cream with chopped onions and jalapeno.<\/p>\n

<\/a><\/p>\n

This time round I want to add in more vegetables and less creaminess to it as I will be pairing it with some beer can roasted chicken which I saw from Strait Times column<\/p>\n

Ingredients needed (can feed 4 pax) :<\/p>\n

\n
• Red skin potato x 8 small ones<\/li>\n
• Long beans x 12 stalks, cut into 4 cm length<\/li>\n
• Capsicum x 1\/2, cut into cubes (deseed, I usually choose red or yellow ones as it is sweeter)<\/li>\n
• Spring onions x 1 stalk (optional)<\/li>\n
• Lemon x 2 teaspoon<\/li>\n<\/ul>\n

  <\/a><\/p>\n

  Directions :<\/p>\n

  1. Boil potatoes in salted hot water till soft (you will know it is cooked by poking a toothpick or chopsticks in it, if it goes thorough easily, it is cooked)<\/li>\n
  2. Once potatoes are cooked, sieve them out and boil the long beans with capsicum for 1 min and sieve out.<\/li>\n
  3. Dunk the long beans and capsicum in ice water or run under the tap water<\/li>\n
  4. Cut the potatoes into cubes<\/li>\n
  5. Pour in the Carrefour mustard mayo, add salt & pepper (optional), squeeze in lemon juice<\/li>\n
  6. Mix well and serve warm or chilled<\/li>\n<\/ol>\n

     Instead of long beans, you can also cut up small pieces of broccoli too.<\/p>\n

     <\/a><\/p>\n

     One other thing that I think goes really well with the salad is adding in dried cranberries and walnut just to give it extra crunch.<\/p>\n

     <\/a><\/p>\n

     As for the made in France Carrefour mustard mayo, taste wise, it has this slight sharpness of mustard, the mayo flavour is not overpowering so it is not your regular kind of creamy mayo. I personally feel it is still good to sprinkle some salt in the potato salad. But for $2.65, this bottle can last you quite a few potato salad servings too, and you don’t need to buy another bottle of mustard.<\/p>\n

     This mayo is definitely goes very well with grill food too.<\/p>\n
