This coming National Day, I am planning to cook up something which is easy to make and not just the regular steamboat affair, hmm.. something that represent Singapore perhaps? or at least full of the Red & White decorations. 🙂
And what’s better than start this off with a Birthday Cake! Yeah, my son’s favourite too! haha.. This Japanese cheese cake recipe is very simple and easy to make, I usually make it with just strawberries without the coconut flakes, but since it I want it to be a Singapore theme, I use it to decorate. 🙂
Ingredients (serve 10 pax for large pc or even 35pcs if you want to serve small serving :))
Cheesecake Base
- Digestive biscuits x 6pcs
- Cooking Oil or Melted Butter x 3 tablespoon
- Philadephia Cheese x 1 pack (250g)
- Whipping Cream x 1 box (200ml)
- Eggs x 2
- Plain flour x 3 tablespoon
- Caster sugar x 60g or about 5 tablespoon
- Lemon juice x half
- Desiccated coconuts x 4 tablesspoon
- Tin Foil
Strawberry Jam (recipes can be found here)
- Strawberry x 1 large carton
- Sugar x 6 tablespoon
- Lemon rind x 4 pcs
Honestly speaking, I am really not good in baking, haha.. the biggest reason? I am far too lazy to measure my ingredients, and I am horrible in following strict recipes esp in grams, as I love to concoct my own and kind of feel my way to how much the ingredients should be.
So if I can make this cheesecake time after time without any problem, I can tell you anyone can make this! 😀
Directions :
1) Place all the digestive biscuits into a plastic bag or zip lock bag and let your kid have fun to bash it into small pieces, kind of stress relief for me too. 🙂
2) Pour the crumbled biscuits onto a baking tray or alluminium foil tray with baking paper line at the bottm and the sides, this is optional, I tried both ways, lining it with baking paper does make it easier to cut and take it out from the tray
3) Pour melted butter OR cooking oil onto the crumbled biscuits and use the back of the spoon to press it in, so that you can get a firm base
4) With a blender, pour all the cheesecake ingredients in it and blend it up (very easy right??)
5) Once all blended, pour the cheesecake mixture over the biscuit base
6) Preheat oven at 170 degrees and bake for 1 hour, this time varies depending on ovens, but as long as you poke in a toothpick and it come out dry, it is cooked. 🙂
7) Unleash the little artist in you and use a piece of baking paper and cut out the singapore flag design. 🙂
8) Once it is done, pour the strawberry jam over it and let it cool down a bit, place the baking paper with singapore flag design over it and now this is the fun part for kids, sprinkling of coconut flakes! 🙂 My son was having so much fun doing it. He even sshhh.. me when I ask him if the coconut flakes is enough, haha…
During baking, if you find the top start to darken and if you worry it will get burnt, just place an alluminium foil over it and lower down the temperature to around 100 degrees.
For this cheesecake recipes, you can always use various kinds of jams, or even just plain cheesecake with perhaps rum raisins inside. 🙂
Using the desiccated coconuts is still fairly new to me, I was comtemplating what ingredients I can use to make the sign of the moon and the stars, almond pudding, frosting sugar, agar agar jelly with coconut milk, but as I do not want this cheesecake to be very sweet, I opted out all these and chosed coconuts flakes instead so that I can still use it for other recipes. 🙂
