Marinara sauce is one of the simplest to cook from scratch because with all the seafood you add in, the sauce usually taste heavenly.

This time round, my dad decided to cook up a storm and to start off with this mini cooking marathon. This easy to cook yet amazingly delicious marinara seafood stew.

We paired it with some grilled steak as well, so it was a Surf & turf dinner. 🙂

One of the key thing is the tomato, and as we wanted to shorten the cooking timing, we decided to use the blender to do some of the tomato cut up jobs.

Ingredients I have used to serve 6 adults and 1 child.

  • Tomatoes – 7 large blend up
  • Scallops – 6 pcs (1 pax each)
  • Shrimps – 10 pcs
  • Clams – 1 pack
  • Squid – 1
  • Garlic – 3 cloves
  • White mushrooms – 1 pack, slice
  • Onions – 1
  • Chorizo sausages – 1 slice (portuguese sausage – optional)
  • Chili – 2 – 3 optional (I skipped because  am serving to kid as well)

Directions :

  1. Sauteed onions, garlic and tomatoes with olive and add in mushroom slices
  2. Dry and sauteed the scallops with some butter and olive oil and put it aside, follow by the shrimps and the clams & squid.
  3. Follow by pouring the tomatoes puree in and let it simmer. Add salt and pepper to taste and let the seafood infused the broth, until the liquid start to dissipate a little, you can add in the chorizo sausages and simmer a further 5 mins.

Pair it with pasta and my favorite garlic toast and I have a very happy meal ahead. 🙂
