Okay occasionally during weekends do you sometimes want to make a nice little brunch or breakfast to let you enjoy your weekends before prepping for the big Monday?
For my household, I will try to make something nice on Sunday so that I can “play” cooking with my son at the same time, prepare some snacks that will last everyone through the day as everyone at our home wakes up at different timing. 🙂
So I think with this in mind, quiche may be a really good choice as it is tasty, fuss free and can be prepared in advance and just only pop into the oven or microwave and viola, quick tasty meal just for the weekends 🙂
This time round I have made breakfast quiche, in the past I also made spinach cheese, salmon cheese and also bacon flavor. I always stick to mostly breakfast items as it blend well with eggs and eggs is a main part in this recipe.
Ingredients needed
- Frozen pastry (I used pampas, or you can also use Carrefour house brand too, of course you can try making it from scratch but not for me as I want to have a easy breezy sunday morning :)) * – 1pack defrost
- Eggs –  3 beaten
- Carrots, green peas and corn or you can always go with frozen mixed veges but as I like smaller pieces of carrots so I opt to using fresh ones, each quiche only require around 1 teaspoon of each
- Baby tomatoes – cut into halves, I deseed it but it is all up to your preference
- Cheese – mozarella or just sliced square cheese
- Ham or bacon (bacon always taste better but as I have left over ham in the fridge I opt to finish it instead) – 2 slices
- Milk x 2 tablespoon (optional)
- Salt n pepper
*** ingredients is optional and feel free to swap it 🙂

Tools needed is a rolling pin but no worries if you didnt have as you can also knead out the shape.
Baking paper just for easy clean up as I will roll in on the baking sheet
Directions
1) take out defrosted pastry dough n roll or knead it flat then cut into small pieces to line on a the muffin tray
- you can use muffin tray, a baking tray or just baking paper too
- you can also preheat the oven to 170 degrees
2) cut up all the vegetables and blanch in hot water for green peas, carrots, corn for 1 min.
3) if you use bacon, you can fry it before hand or just cut up without frying
4) after filling the tray with the dough, just sprinkle all the ingredients in it, add little salt and pepper if you want
5) add 2 tablespoon of milk into the beaten eggs and blend it in. (again you can use pure beaten eggs)
6) pour the liquid into each uncooked pastry & slot into the oven for 20 mins depending on your oven settings. You will know when it is done – a nice golden top and the puffed up pastry is all it takes
Serve it while it is hot with a side of salad, fries. I like to have it with both ketchup and Tabasco sauce, or with a scoop of chutney 🙂
Varies this recipe with different ingredients but have the pastry and the beaten eggs stay the same.
Cafe quiche at home can be quick and easy too 🙂
I used the muffin tray to make it because my son want to play with the dough so if you didn’t have the time to knead into 6 pieces just place one pastry on the baking tray. In the past I also use Carrefour house brand which didn’t require any rolling too 🙂
I have left over pastry dough and ingredients, so I just made one pizza like quiche too. This is a recipe that you can prepare with your kids too. They will love the placing of ingredients and also how the pastry puff up. 🙂
If you do decide to make a batch and want to store it, it is usually good for a few days and all you need is to reheat in the oven.
However, if you want to heat it up the quick way, try microwave, one tip is that you can heat it on high mode for 1 min – 2 mins and then without opening the microwave oven, let it keep inside for 5 mins, and you will get a crispy pastry back. 🙂 A small trick I always use when I was still schooling. 🙂

You can see the promotions base on the week no. 🙂 like this week will be week 23 and so on, we will also try our best to add the supermarket promotion updates weekly.

Can i replace the muffin tray with aluminium cup.

Yes, do you mean disposable aluminum cups? you can use that, the same rules still applies, you know when it is done when you put a toothpick in and comes out clean. But I still do recommend you to grease it with butter, as I tried in the past to bake it in those large disposable aluminum tray for my friend’s party, the sides can get stuck at the corner if you press the dough too hard into it to create the shape. 🙂 If you have any baking tray, it will work too, you can make a large one and then after its done, cool down and slice it into different slices. 🙂
