SIMPLE AND QUICK RECIPES – PINEAPPLE RICE WITH DANCING CHEF

Recently I have this keen interest in making rice dishes and few months back, someone mentioned to me about cooking pineapple rice and how simple it can be.

As I have never tried cooking this dish before, sound like something that I love – one pan cooking 🙂 & from recommendation, I bought my first Dancing Chef pineapple rice sauce. 🙂

Of course as usual I will tweak the recipe a little to suit my family and this time I added some ingredients that most of us like. It will be nice to cook from scratch, but I really do not mind to pay just over $1 to get a packet of spices or sauces to make my life easier too. 🙂

When it comes to pineapple rice, there need to be a concentration of flavours, and has to be a melange of sourness, sweetness and spice. A balance between the savory part which is the meat, shrimps and even pork floss and the sweet part which is pineapple, raisins. Of course the crunch from the cashews will give it an extra bite. 🙂

Ingredients

  • Dancing chef sauce x 1 packet
  • Rice x 2 cups
  • Pineapple x 1/2  can or 1/2 fresh, cubes
  • Red capsicum x 1/2
  • Cashew nuts
  • Raisins x 1 tbspn

  • Onions x 1 small chopped
  • Chicken or roast chicken or cha Siew or lap cheong (Chinese sausage), cubes 1/4 cup
  • Shelled Prawns x 5pcs
  • Coriander x 1 stalk
    * please feel free to adjust the qty, if you like any particular ingredients more. 🙂 I added more cashews.

Directions :

  1. Cook rice and leave it to cool, better still overnight in fridge so that the grains will not stick together, you can even freeze the rice and thaw it just before cooking, that’s how japanese people do
  2. Fry shrimps and chicken and leave aside
  3. Heat pan with oil under medium heat, brown onions until soft and add pineapple rice sauce and sautéed for around one min
  4. Add in rice to the pineapple paste and fry until combined and the rice are all covered in golden yellow color
  5. Add in the rest of the ingredients (except corriander & cashews), fry until fragrant
  6. Lastly, just add in cashews and sprinkle some corriander & Tuck in! 🙂

Okay, now is the taste test, look wise, it looks really appetizing, because every grains looks like they are covered in golden dust, brimming with flavor.

After adding other colorful ingredients, this is really one dish that is great for parties and gathering.

There is a robust flavour of spices in it, and the rice textured changed after cooking with the sauce, it tasted a little chewy with the sweetness of the pineapple giving it a lot of oomph.

I swiftly wolfed down when it is still piping hot, and had a second servings later once it is cool down, both tasted good as well. But I think convenience also matters too. This sure is a really convenience recipes, I only use one pan and lessen so much washing of the dishes as for all the ingredients I only use a pair of scissors to help me settle, a great recipe for busy people.

If you want to replicate something restaurants serve, you can also end with a finishing dash of pork floss over it. The sauce itself is not spicy, so if you want to add a little fire in it, try using dry chilli peppers, rather than fresh chills, as the fresh chillis might taste a bit too strong. 🙂 Oh I try with tabasco and it is good too! I will definitely try out other sauces from the Dancing Chef as well, since this is pretty good. 🙂
