QUICK & SIMPLE RECIPES – OKONOMIYAKI SAVORY JAPANESE PANCAKES

Hi there,

I have been wanting to cook Japanese savory pancakes called Okonomiyaki for the longest time. I use to cook it very often, and also during my school times, I use to cook this very often with my flatmates and always have little Okonomiyaki parties, it is great party food and is very easy to make. Quick & simple & yummy, who wouldn’t like that. 🙂

This is something that is good for either a main dish or a side dish, actually I will be posting another recipe which is using the same batter of this recipe but turned it into Korean pancakes instead.

This dish can be made into a vegetarian dish or with seafood & with various kinds of meat. I used below ingredients as I have it at home and wanted to clear my fridge, so you see, you can really mix it anything you like.

QUICK & SIMPLE RECIPE – DAISO COLD NOODLES WITH A TWIST

Do you like cold Japanese soba? cold springy noodles soaked in flavourful dashi sauce. Great for a hot sunny day to relief you from the heat. So how about Japanese Cold Noodles with a Twist and even better, a quick & simple recipe.

As I mentioned in my previous post I am a big fan of Daiso and always on the lookout for their products. I got another good buy this time.

I have always like Hiyashichuka, which is Japanese cold or chilled noodles, but ironically Japanese people call it Chinese Cold Noodles. However, they are somewhat different from normal soba, actually if you have it in Japan, they are usually like ramen noodles but in chilled form. It usually comes with heaps of colorful toppings, with a refreshing citrusy tangy flavourful dressing on it.

I think this product is good for people who like cold noodles with a twist, it is practically a hybrid between a salad and noodles. I use to love it during my school days because it is low calories and as I love salad too, this is a very satisfying meal that is healthy & filling and you can go very creative with this.

As time goes by, I have totally forgotten about this and usually just go for my ramen fix so I was very excited when I see this at Daiso.

On the packaging, it says Lemon Flavour, and comes with 2 packet of dressing with noodles. One pack is for 2 servings, but I really recommend you to have 3 people sharing it, as the portion can be quite large after you have added all the toppings. 🙂

QUICK & SIMPLE RECIPES – JAPANESE COROQUETTE OR FRIED POTATO PATTIES

Hi there

I got this quick & simple recipes, Japanese coroquette recipes here which are deep fried Japanese potato patties. You can also opt to use tuna or crab meat or just plain veges too to substitute mince beef which I use in this recipe.

As for this recipe, I will be making mild Japanese curry coroquette so that you can keep it in your freezer and just cook it whenever you have cravings for it.

I think many of you know sometimes cooking small amount is much harder than cooking for many people so this recipe whereby you can freeze it and allow you to consume slowly is really convenient.

QUICK & SIMPLE RECIPES – SEAWEED SALAD FROM DAISO

I got this pack of seaweed from Daiso during one of my hunt for Daiso goodies at Rivervale Mall. If you like seaweed or perhaps want some changes to your usual vegetable salad, you can try out this dry seaweed pack. It is quick & simple to make and requires zero cooking.

It is only 16 kcal & also contains kanten, a form of “agar agar”, which is both delicious & healthy. Japanese ladies love to eat kanten as a form of diet too. Ingredients is all up to you, whatever you want to put in, you can put in some chicken breast too if you want to up your protein, but I personally prefer just only seaweed + cherry tomatoes + cucumber slices.

QUICK & SIMPLE RECIPES – MAGGI SPAGHETTI

My family love this spaghetti recipe which I accidentally “invented” when I ran out of pasta sauce at home one day. I was supposed to cook Alfredo that evening but to my horror, I ran out of cream sauce, so I have changed the recipe to something light  used maggi seasoning which my mum will use when she pan fry some pork chops.

And it was truly a blessing in disguise! the dish turned out fantastic, and I have been cooking it ever since. It is very fragrant, fresh & light with all the corriander & spring onions. Tweaked a little, added a little more ingredients like seafood, and now it become a main stay at my household.

This dish is best with tonnes of minced garlic, so is a bit like aglio olio but with extra kick to it.

Ingredients you will need (can serve 4)

  • Bacon x 1 pack or 100 – 150 g
  • Garlic x 1 (mince)
  • Chilli x 3
  • Prawns x 8
  • Frozen mussels x 8
  • Spring Onions x 1 big bunch (abt 5 stalks)
  • Corriander x 1 pack (about 3 stalks)
  • Chinese Cooking Wine x 2 tablespoon
  • Maggi seasoning sauce (up to your preference)
  • Spaghetti, or vermicelli or angel hair pasta (I personally prefer vermicelli as I feel it taste lighter)

Directions :

1. Deveined the prawns, keep the shells & heads (you can discard it if you find it troublesome to fry the prawn oil)

2. Chopped up Bacon, Corriander & Spring Onions.

(Tips#1 : I use the chopper that cost $10, it is usally on sale in supermarket or OG, it is a container with blades inside, so you can chopped up the garlic & chilli in no time by twisting the cover, and any excess, just pour in some oil & store in the fridge, & you can use it for days)

3. Pour a little olive oil in the pan & add a slice of butter
(Tips #2 : To avoid burning butter, pour oil first and drop the butter in the oil, that way butter will melt without burning)

4.  Fry the prawn’s heads & shell in the oil & butter in low fire, so that the oil will become very fragrant with the prawn roe. Use this oil to fry the prawns & mussels and sieve out, leave the oil in the pan

(Tips #3 : Once the prawn head & shell turned orange, fried a further 2 mins & you can discard it but keep the oil)

Process 2

5.  Use the same oil to fry the bacon until it turns a little crispy & add in garlic & chilli.

6.  Throw in some boiled spaghetti, (I prefer to use vermicelli, angel hair pasta will taste great too),

7.  Pour in Maggi seasoning sauce & cooking wine & fry the pasta with the mixture.

8.  Sprinkle all chopped spring onions & corriander & mix well.

For people who find saucy pasta too heavy on hot weathers, you can cook up this recipe, it is light, refreshing & very savory. Instead of bacon, try out some chorizo sausages, or salami, you can mix & match any ingredients you want to add on as toppings too. So let your imagination do the magic in the kitchen ^^

I have got a quick & simple recipe here for you, Japanese Yakitori, those little tantalizing skewers of meat & seafood that you get from stores like Tori-Q & yakitori restaurants.

During my schooling days, I have worked in a yakitori restaurants for few years, so I have always have a soft spot for this Japanese dish. It is so versatile, you can use anything you can think of & make your own Yakitori, vegetables, seafood, meat, even sweets. The combination is only limit by your imagination!

Today dinner, I have made some Yakitori for my family, menu include :

  • Meat Balls (instead of chicken meat balls, I used pork meat balls)
  • Prawns wrapped with pork
  • Enoki mushroom wrapped with pork
  • Asparagus wrapped with pork

Hi there,

I make quite a lot of salad at home and the Vietnamese Fresh Spring Roll is one of my favourite when I want something light and  especially when I cook up Vietnamese beef noodles, to pair with them. Not only Quick & Simple recipes but also very delicious & healthy.

I have tried a few brands of Vietnam spring roll skin, but either they are very tough or they tear really easily when I wrap them around, I got this brand from Sheng Siong supermarket when I was looking for some mala steamboat  soup base. So thought will try it out, & to my delight this brand is really good!

Ever wonder how to cook the delicious aromatic Japanese Curry Rice that you always order from Japanese restaurant? Some might think it might be a daunting task, but it is actually a very easy & simple Japanese recipe. 

During my schooling days, my Japanese flatmates always debate whose own concoction of curry is the best, you can get all these weird curry ideas, like putting in ketchup, or mixing different brands of curry powder, some even put in mayo, talk about innovative recipes ^^”>…. 

I cook this dish rather frequently, especially on Sunday nights, because my husband LOVES this dish, it fits his requirements, (1) taste great & (2) easy to eat, ok don’t even need to use chop sticks to pick your food. hmm…

 And it also fit mine, easy to cook & easy to wash as this is really a one pot wonder.
